Observation: 1) Undercounter fridge has accumulated food debris, grease and green substance is also noted in the back. See photos. 2)Espresso machine needs cleaning as well (drip trays, dispenser, steam wand etc.)
Corrective Action(s): Pull out all food products and do a deep clean of refrigeration units. Clean the espresso machine daily.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: One container of bleach sanitizer was measured >200ppm and the other container measured >50ppm. No test strips onsite.
Corrective Action(s): Use 1/2 teaspoon bleach to 1 litre water to make 100ppm bleach sanitizer. Obtain test strips for staff to use.

Observation: One bag of baguette was left on the floor in the dry storage room downstairs. Opened can of tomato sauce syran wrapped and stored in cooler.
Corrective Action(s): Ensure not to store food on the ground. Transfer food content from can to food grade container.

Observation: Flies noted throughout kitchen, low activity in the bar.
Corrective Action(s): Please incrase the cleaning, remove spills and liquid residue. See comment on code 306.

Observation: Food debris noted on the floor under fridges and cooking line.
Corrective Action(s): Staff started cleaning at time of inspection. Again, kitchen must be maintained reguarly.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Small rice cooker used to cook potatoes is observed to have heavy scratches on the bottom of rice pot, where metal residue could get into food.
Corrective Action(s): Please replace the rice cooker so the new unit is intact and operational.

Observation: Several floor tiles damaged and cracked in kitchen (between undercounter cooler and cooking area) as well as dishpit area. See photos. Raw wood still noted under shelving units above dishwashing sinks.
Corrective Action(s): Please contact undersign to determine a reasonable time frame to have the above issues resolved.

Observation: Not all refrigeration units are equipped with thermometer. There is also no probe thermometer used to determine food temperature.
Corrective Action(s): Ensure each refrigeration unit is equipped with a working, accurate thermometer. Obtain a NSF approved probe thermometer.

Observation: Onsite staffs are not Foodsafe certified (kitchen staff's Foodsafe was taken 1993 and bar staff in 2007).
Corrective Action(s): Please have the main kitchen staffs take Foodsafe Level 1 asap. Fore more information, please visit www.foodsafe.ca.
