Observation (CORRECTED DURING INSPECTION): Prepared pizza stored in display case observed at 27 Celsius. The product time holding was in corrrect.

Observation (CORRECTED DURING INSPECTION): Sanitizer not available for use, spray bottle empty. Prepared solution was made with one pump of concentrate added to 946 ml bottle and then topped up to 946 mls of water. Tested solution was excessively concentrated. A serial dilution 1 oz of prepared solution was added to approximately 17 oz of water that resulted at a 200 ppm Quats solution. The rough concentration of solution prepared during inspection was 4000 PPM Quats
