Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No Sanitizer being used in the kitchen. Staff observed wiping knives and cutting boards down with wet cloths
Correction: Santizer must always be used and knives should be washed in the dishwasher after use not wiped and placed down the crack between two coolers.
Immediately make up a sanitizer solution either of bleach or quats.
Immediately wash and sanitizer knives in dishwasher.

-Food storage in walk in cooler has been organized. All raw meat is stored in a separate area
-dry storage shelves have been reorganized and cleaners/chemicals have been stored elsewhere
-Raw wood used under sushi cutting boards have been removed
-hand sinks are no longer blocked by buckets or other equipment
