Ensure dishwasher is monitored daily and recorded on a log - recommend obtaining a max/min thermometer. Looking for 71C/160F on the inside of the machine.
Provide test strips to monitor sanitizer concentration
Ensure only a single rack is placed into dishwasher at at time - do not double stack

All temperatures meet health requirements
Hand washing sinks equipped with liquid soap, paper towel & hot/cold running water
Sanitizer at dispenser tested at 200ppm Quats
Temperatures monitored by engineering
Dishwasher reached 71C at plates surface during rinse cycle
