Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No sanitizer solution available for prep surfaces. Volunteers refused to use bleach for disinfection of surfaces.
Correction: Ensure to prepare a 100-200ppm chlorine solution in a spray bottle by adding 1/2 tsp of household bleach per 1L of water as agreed at this time. Ensure all volunteers are using this solution to sanitize the prep surfaces before starting food prep in the morning, after each possible contamination and every 2 hours during operation.

Observation: Dishwasher was dispensing 0ppm chlorine at the dish surface. The drain pipe was leaking and the water was ponding.
Correction: Call for service and ensure that the dishwasher dispense 50ppm at the dishsurface during final rinse.
- Fix the drain pipe and ensure that the volunteers use the dishwasher for washing dishes
- USE SINGLE USE ITEMS ONLY until the dishwasher is fixed

Observation: Handwash station in kitchen missing paper towels in the dispenser. Hand towel being used instead.
Correction: Ensure all handwashing stations are adequately supplied with liquid soap, paper towels and hot/cold running water at all times.

Observation: Handwash station in kitchen missing paper towels in the dispenser. Handtowel being used instead.
Correction: DO NOT use handtowels - resuable towels to dry hands, but single use paper towels at all times.

Observation: All handwashing stations were missing either paper towels or liquid soap.
As per last inspection, it was suggested that new dispensers be installed for each hand sink so handwashing can be done properly.
Correction: Install new liquid soap and paper towels dispensers.
Paper towel dispensers that are already mounted to the walls must be fixed so that paper towels are dispensed properly.

Observation: The dishwasher is not dispensing sanitizer, 0ppm chlorine detected at the dishsurface during final rinse cycle
Correction: Call for service. Ensure that 50ppm chlorine is dispensed during final rinse cycle at the dishsurface.

Follow-up inspection conducted:

All violations observed during the routine inspection now in compliance.

High temperature dishwasher had to be repaired and invoice was provided at this time. 78.2'C was achieved at the plate level after final rinse.
Bleach available on site for disinfection of prep surfaces. Ensure to add 1/2 tsp of bleach per 1L of water to prepare 100-200ppm chlorine solution every morning.
No vegetable cutting occurring in the hallway at this time.
