Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] (0 ppm chlorine residual at the plate after the dishwasher final rinse and 0 ppm iodine residual after the glasswasher final rinse was available. Iodine sanitizer was not available on-site. )

Follow-up Inspection:

12-25 ppm iodine residual was available after the glasswasher final rinse.
At least 50 ppm chlorine residual was available after the dishwasher final rinse.
Chlorine test strips were available.
It was mentioned that the operator will obtain iodine test strips to enable staff to check the glass-washer on a daily basis.
Food was not contained in garbage bags.
A template for keeping records of refrigeration temperatures and the final rinse chlorine residual for the dishwasher was provided. Please keep records of temperature check, the dishwasher check, and glasswasher check at least on a daily basis. You may create your own template if it is more convenient. The records will be checked during the next routine inspection.

The only outstanding issue is re-organizing the downstairs area to place the chaffing dishes at least 6 inches off the floor. It was mentioned that a staff member working on the weekend will attend to this matter.
