Routine Inspection:

Front Area:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
Temperature of coolers (sandwich prep, under-counter) maintained at or below 4 degrees Celsius.
Temperature of all hot holding units maintained above 60 degrees Celsius.
Concentration of QUATs sanitizer in all pails = 200 ppm. Wiping cloths stored in sanitizer solution - very good.
Ice well maintained in a sanitary condition.

Back Area:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers (egg and walk-in) maintained at 4 degrees Celsius.
- Freezers (3-door standup and walk-in) maintained below -18 degrees Celsius.
- Hot holding units maintained above 60 degrees Celsius.
High temperature dishwasher sanitizing with 74.6 degrees Celsius at dish level after the final rinse cycle.
3-compartment sink available for manual warewashing and equipped with hot/cold running water and drain plugs.
Concentration of QUATs sanitizer at dispenser = 200 ppm.
Concentration of QUATs sanitizer in pail = 200 ppm.
Ice machine maintained in a sanitary condition. Ice scoop stored in a designated container above the ice machine.

Overall:
General food storage practices good:
- Foods covered and protected from contamination.
- Dry storage organized.
- Food stored at least 15 cm off the floor.
No signs of pest activity noted at the time of inspection.
Premises well lit.
