Freezer at -19 degrees C.
Hot holding internal temperatures measured 60 degrees C or more.
Food is protected from potential contamination.
Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hands soap, and single use paper towels.
Proper hand washing practices observed.
Non-latex single use gloves available.
Quaternary ammonium compounds (quats) sanitizer available from dispensing units and in labeled spray bottles at 200 to 400 ppm.
High temperature dishwasher measured 77 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
Stored equipment and utensils in clean condition.
Four-hour timer in use for deli slicers (cleaned and sanitized every four hours).
Temperature and sanitation logs generally well maintained. Corrective actions are being noted.
