Observation (CORRECTED DURING INSPECTION): A tray of meat curry observed cooling under room temperature. Internal food product temperature measured at 37C. Chef stated meat curry was cooked around 1 hour ago.
Corrective Action(s): Use facility cooling method to cool food such as ice bath, ice wand and/or using shallow and small trays. Do not cool food at room temperature. Food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours. Chef move the curry into a ice bath.

Observation (CORRECTED DURING INSPECTION): Food sanitizer not available at the kitchen area. Only 1 sanitizing spray bottle available on the premise.
Corrective Action(s): Each area with food processing must have food sanitizer available for use. Food sanitizer must be stored close to the area for convenient access. Obtain sanitizing spray bottle or pail for each of the food preparation area.

Observation (CORRECTED DURING INSPECTION): Reusable towels used to cover food stored inside the walk-in cooler.
Corrective Action(s): Do not use reusable towels to cover food. Towels are made from porous material and can not be cleaned and sanitized properly. Food must be covered with non-porous, smooth, food grade material.

Observation (CORRECTED DURING INSPECTION): Frozen samosas and potato bites observed thawing under room temperature.
Corrective Action(s): Do not thawing food under room temperature. Frozen food must be thawed inside a functional cooler or under cold running water. Chef moved the frozen food into the walk-in cooler.

Observation: Modification performed on the in the kitchen walk-in cooler without health approval. The size of the walk-in cooler decreased compare to previously approved plans.
Corrective Action(s): Submit updated floor plan to the Environmental Health Officer. Correct by: Dec 20, 2019.

Observation: In operator's absence, no staff on duty has a valid FOODSAFE Level 1 or equivalent. This is a repeated violation.
Corrective Action(s): During operation, at least one staff on duty must have a valid FOODSAFE Level 1 or equivalent. This requirement must be met during future inspection. Failure to met this requirement in the future inspections may result enforcement actions such as Correction Order and/or Violation Tickets. Correct by: Dec 20, 2019.

- Walk-in freezer maintained at -19C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Low temperature dishwasher dispensed 50 ppm bleach sanitizer at the plate level.
- Glass washer dispensed 12.5 ppm iodine at the plate level.
- Ice mahcine maintained in a sanitary condition.
- Premise was well lit.
- Food items stored off the ground.
- No pest activities observed at the time of the inspection.
