General sanitation is satisfactory.
No obvious signs of pest noted.
Temperature of refrigeration and freezer units are satisfactory.
Resume recording of temperature and sanitizer level checks. Please email the log to me before the end of next week (cooking, reheating, refrigeration, freezer).
Food probe thermometer is accurate.
Temperature reached 160F inside the dishwasher after three tries. Please put the dishes through several times if it has not been operated for a period of time. Thermometer on the dishwasher is broken. Operator stated that a new one is on order. Ensure that it is a commercial unit certified by NSF or equivalent.
New shelving units will be installed to organize storage.
Post or keep staff's FoodSafe certificate at the premises so that they are available for viewing during an inspection.
Operator is intending to offer takeout and dining in the future. Please contact us for approval.
