Comments

- Cardboard used to line floors in meat cutting area - discarded daily. OK.
- Meat band saw and grinder were in use at time of inspection. Ensure to thoroughly disassemble, clean and sanitize after each use or after every 4 hours if used consecutively.
- All meat and poultry obtained from approved suppliers.
- Bleach sanitizer solution available at 200 ppm in bucket for storing wiping cloths. Reminder to change solution every 2-4 hours.
- Hand sinks were supplied with hot and cold running water and liquid soap. **Ensure hand sinks are also supplied with paper towels, as noted in violation code 401 above.
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- Bulk bins were maintained in sanitary conditions. Reminder to wash and sanitize scoops regularly.
- Food storage practices satisfactory, packaged food items were in good condition.
