Observation (CORRECTED DURING INSPECTION): Fired eggs noted in prep cooler temp 22 oC - shortly stored in cooler
Corrective Action(s): -Discussed proper cooling procedure (use ice water bath and reduce temp to around 4 prior to storing in small cooler) 60 oC to 20 oC <2 hrs and 20 oC to 4 oC in less then 4hrs (this step can be done by putting in walk in cooler and monitoring)

Observation (CORRECTED DURING INSPECTION): -Noted raw meat stored on bucket of sauce in prep cooler near cooking equipment
-Noted boxes of food products stored directly on the floor

Corrective Action(s): -Store all raw meat in lower shelf and away from cooked or ready to eat products
-All food preducts to be stored on shelving at least 6 inches off of the floor ( dry goods, products in walk in freezer and walk in cooler)

Observation: Poor cleaning noted under equipment and wall, ceiling and floor in walk in cooler and walk in freezer, and fan cover in both.

Met with GM and Produce Manager (translator)
-Deli and meat department -two separate areas side by side
-Hand wash sink stocked with soap and paper towel ( hot and cold water)
-No dish washer- 3 comp sink - sanitizer at third sink >100ppm
-Hot holding unit temp >60 oC
-Temp of coolers and freezers are satisfactory (< 4 oC ,and < -18 oC respectively)
-Sanitizer in spray bottle >100 ppm
- Kimchi production is done in Deli (daily) all products packaged and store in cooler
-Pest control company is contracted (once per month)

*Discussed having enough FS trained staff (with valid FS training) on duty at all time
* Discussed proper storage of clean dishware - do not store any clean dishware/utensil under sinks
*Ensure to label spray bottle sanitizer ( bleach solution- sanitizer)
*Ensure to provide accurate thermometers for all coolers
*Ensure to record temp monitoring data (coolers twice daily-hot holding twice daily and sanitizer concentration once daily) in a log sheet and keep it on site.
*Submit a proposal re: resurfacing walk in cooler and freezer ( walls, ceiling and floor) with time line to complete.


Address all noted violations and * items, send an action plan to address all via email to the area inspector no later then Sep 29-2021, another inspection will be conducted to check. Any question contact the area inspector.
