Corrective Action(s): Ensure during operation all areas involved with food preparation are provided with either a 200ppm quats or 100ppm bleach sanitizer solution.

2 compartment sink available for use.
Ice machine maintained in a sanitary condition. Ice is used to facilitate cooling of sauces, broth, soup, etc.
Under the counter cooler at 4 degrees C.
Freezer at -17 degrees C.
Ice wand available for use.

Cooking room:
Area maintained in a sanitary condition.
Hand sink provided with liquid soap and paper towels.
2 compartment sink available for use.
Sliding glass door cooler at 3 degrees C.

General area:
All dry products stored off the floor.
Pest control services in place. No mice caught in traps.
General sanitation is satisfactory.
Walk in cooler at or below 4 degrees C.
Walk in freezer at -18 degrees C.
Temperature monitoring records maintained and available for review.
Mop sink area. Chemical dispenser dispensing quats at 200ppm.

Processing room:
Area is temperature controlled at ~10 degrees C.

COVID-19 safety protocols:
Post a sign on front door reminding staff or visitors not to enter if sick.
Keep logs of health screening that is conducted for staff. Have records available for review.
Masks observed to be worn by all staff. Some work involved staff working less than 2 metres apart for more than 15 minutes. Remind that for contact tracing to identify any close contacts.
Isopropyl alcohol used to disinfect work areas in office. Use the quats sanitizer that can be dispensed from the mop sink room dispenser.
Reminded manager about carpool safety.
