Observation: Fried sweet and sour pork and various other items are either not stored in covered containers and protected or covered with grease stained paper bags, in the walk in cooler
Corrective Action(s): Cover all items and protect from contaimination during storage.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings visible in dry storage area under wood shelving and on second level of wood shelving. Also some around corners and near back entrance. Operator has contacted pest control contractor who has put snap traps and sticky traps down to monitor and capture but these types of traps are not recommended for food service establishments.
Corrective Action(s): Please call back the pest control contractor and get them to replace with sealed, metal box type traps or other appropriate traps for food service establishments. Clean up all corners and rodent feces with bleach and water solution as discussed and with appropriate PPE, see Fraser Health website on cleaning recommendations.

Observation: Gap observed under metal door at the back, enough to fit a pen through, potential entry point for pests such as mice.
Corrective Action(s): Place a seal, bristle, metal or rubber to seal door and ensure there is no gap (no light showing through), to prevent pest entry.

Observation: Underneath main fry/grill area is thick with black, grease, debris, and 3 fly trap mats.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dishwasher 100ppm Chlorine but chlorine is being added to second rinse, there appears to be another 3rd rinse after this one with detergent or water and no chlorine is detected at the final rinse. Timing of dishwasher fluids cycles is off.
Corrective Action(s): Call dishwasher maintenance person and fix timing of dishwasher to ensure final rinse cycle has 100ppm chlorine.
