Follow-up to inspection report #256964 Ambient air temperature of undercounter cooler registered at 4.6 C at the time of inspection. Staff indicated cooler has not been repaired yet and temperature fluctuates. Sometimes it is 4-5 C, sometimes it is above 4 C. Temperature logs not available. Temperatures should be taken and documented every 2 hours for this particular cooler. Staff indicated cooler is stocked for a supply of one hours however it is not tracked. Milk was probed. One carton was at less than 4 C, one carton was at 6 C. Products that are pulled from the main cooler from the back, should be labelled with the time product was taken out or time product must be used by. All potentially hazardous food in this cooler must be used within 2 hours if cooler is unable to maintain a temperature of 4 C or below at all times. Correct immediately. Other comments: Scoops no longer stored in food - good. Instructions for sanitizing have been posted - good. Please provide the local health inspector with an update on the cooler within the next 2 weeks.
