Operator on site and provided a copy of the procedures for the chicken sandwich. Operator to send copy of food safety plan.
Probe thermometer is available for staff to use on site and check each batch of chicken after it is fried the first time, it must have internal temperature of greater than or equal to 74 deg C (165 deg F)
Staff must record the temperatures they record in a log and have this available at all times.
