Observation: 1. Ice machine observed with black build-up on inside panel. Staff discarded all ice during time of inspection.

2. Deli slicer observed with food debris on blade. Chef stated that the deli slicer was used <1 hour ago.
Corrective Action(s): 1. Discard all ice from the ice machine. Remove build up in ice machine by cleaning the ice machine with warm water. Sanitize the ice machine as per manufacturere instructions (with QUATs or chlorine-based sanitizer solution).

2. Clean and sanitize the deli slicer (as per approved sanitation plan) to remove food debris and any potential bacterial growth. Ensure the deli slicer is turned off, disassembled, cleaned and sanitized after each use to prevent bacterial growht and/or toxin production.

Observation: One of two bulbs in the light fixture in the dry storage area is not functioning. The light cover/bulb shield is also removed from the fixture.
Corrective Action(s): Replace the light bulb and attach the light fixture cover to ensure there is adequate lighting in the dry storage area and to prevent potential physical contamination of food from the light bulb. Submit a photo of the repaired light fixture to the health inspector.

Observation (CORRECTED DURING INSPECTION): One of two QUATs sanitizer spray bottles in the kitchen is observed stored unlabeled. The chef labelled the bottle "disinfectant" during time of inspection.
Corrective Action(s): Ensure all chemicals are stored labelled to prevent misuse and potential chemical contamination of food.

- All coolers measured at or below 4'C

- Temperature log maintained digitally/electronically
- Proper cooling methods observed for cooked foods (shallow pans and ice baths)
- All food observed stored at least 6 inches off the floor and covered
- First-in-first-out method is implemented (time stamps available on food containers) - good!
- Dry storage area kept in a sanitary condition
- Raw meat observed stored away from ready-to-eat foods
- General sanitation of premise is good
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- QUATs sanitizer measured at 200 ppm QUATs concentration with test strip
- Commercial dishwasher measured at 72'C at plate surface and 100 ppm chlorine concentration with test strip
- Ventilation hood kept in good sanitary condition
- Staff washroom observed in sanitary condition
- No signs of pests during time of inspection
- Pest control company contracted to complete monthly inspections. Pest reports verified during inspection
- Equipment stored in a sanitary manner
- Chemicals are stored away from food
- Staff observed wearing clean uniforms and practicing good hand hygiene
- FOODSAFE Level 1 trained staff available on site
