Observation (CORRECTED DURING INSPECTION): Large pot of vegetable/tomato soup left in walk in cooler this morning to cool
Corrective Action(s): This pot is too large to cool the soup within the required temperature limits: 60 deg C to 20 deg C within 2 hours, and 20 deg C to 4 deg C within 4 hours. Use smaller pots/containers to separate the soup and cool it down

Observation (CORRECTED DURING INSPECTION): Various prepared kimchi dishes and side dishes were at 14-17 deg C stored in the cooler in the bar area (Across from the cashier machine). Staff indicates they were placed there an hour ago.
Corrective Action(s): All food items must be moved IMMEDIATELY to a working cooler. Any foods that are greater than 4 deg C for more than two hours must be discarded

Observation: Rodent droppings observed along walls behind chest freezer (kitchen side) and in the back area. Also observed in plastic bin on floor in the bar area.
Corrective Action(s): 1) remove all rodent droppings immediately
2) Clean/mop floors thoroughly
3) Contact pest control for immediate visit.

Observation: Prep cooler in front area (with the kimchi and other side dishes) was at 18-19 deg C. Not functioning (not keeping food at 4 deg C or less)
Corrective Action(s): Have cooler fixed IMMEDIATELY. Do not store any potentially hazardous food items inside this cooler.

Routine inspection conducted:

-Handwash stations have soap, paper towels, hot/cold running water
-Freezers at -18 Deg C or less
-All other coolers (with exception of the prep cooler mentioned in the violation) were at 4 deg C or less
-High temp dishwasher achieved 71.2 deg C after rinse cycle


Follow up to be conducted. Manager was contacted during inspection. Sanitation of kitchen is poor. Rodent droppings observed per above violations. If kitchen improvement is not made by follow up inspection, facility is to be closed for a thorough cleaning.
