- Sushi cooler was at 2C. Operators waits for temperature to drop to 4C prior to using for storage of foods.
- Walk-in cooler was at 4°C. Upright cooler was at 4C.
- Upright freezer were at -18°C.
- Chest freezer was at -20°C.
- Hot holding of soup and rice was greater than 60°C.
- Hot potentially hazous foods made the previous night coded in single layers and probed at 4°C.
- Sushi rice had a pH of 4.0
- High temperature dishwasher had a final rinse of 72°C on the dish surface (minimum of 71°C required for proper sanitation).
- Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach labelled and tested at 200ppm
- Sushi cutting board disinfected every 2 hours.
- General food storage practices satisfactory. Raw foods stored separately from ready-to-eat foods. ensure all foods are properly covered.
- General sanitation satisfactory (additional attention required by wall under prep cooler).
- No signs of pests noted at the time of inspection.
- Washroom clean and sanitary.
- Operator FoodSafe Level 1 valid until Oct 13, 2023.
