Left side altosham repaired, hot holding rice at 64C. Right side whole chickens measured 67C

Continue to monitor chicken hot holding temperatures and ensure that all hot potentially hazardous foods are kept >60C (140F) at all times.
Staff must NOT use broken equipment including cooler units and hot holders
