Observation (CORRECTED DURING INSPECTION): One large bowl of onions and one large bowl of mushrooms cooling in walk-in cooler. Staff stated that it was made approximately two hours ago and will be portioned tomorrow. Temperature measured 40C.
Corrective Action(s): Portion mushrooms and onions immediately. Food must be cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less.

Comments

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm quats in spray bottle
- dishwasher dispensed 50ppm chlorine at final rinse cycle
- new Plexiglass barriers installed throughout restaurant
- ensure that food debris behind the cookline removed during deep clean
- odour coming from grease trap; have it re-sealed
- equipment to be serviced in near future
