Observation (CORRECTED DURING INSPECTION): A bag of broccoli and other vegetables were stored near fresh raw meats and poultry items in the cooler.
Corrective Action(s): Ensure that all vegetables and ready to eat items are stored above the raw poultry and meats to prevent the risk of cross contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Heavy build up of grease and burnt food observed on both stove burners; resulting in a risk of fire.
Build up of food debris and dirt noticed underneath and behidn the storage shelf located next to the wok.
Dirty build up noticed on the ceilign tiles and ceiling ventilation grating.
Corrective Action(s): 1. Remove build-up of grease and burnt on food from both burners. ( immediately)
2. Clean floor underneath and behind the storage shelf.
3. Clean all cooking equipment ( area around the wok, deep fryers and grill)
4. Clean floor in all areas of the kitchen especially behind and undernath the line cooler, deep freezer and sinks ( By January 25, 2020).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Upright freezer not in good working order; door seals are damaged resulting in highe temperatures for frozen food. Freezer temperature ranged from -4 to -8 C,
Corrective Action(s): Repair or replace this upright freezer immediately. A deep freezer could be used in place of this upright freezer as long it is capable of mainitaining frozen foods at -18 C or below ( By January 25, 2020). Relocate all frozen meats the small deep freezer (immediately).

Comments

*Quat sanitizer solution in the spray bottle was too strong ( >500 ppm). Ensure to only fill the spray bottles from the quats sanitizer dispenser
located at the wash sink and in the janitorial sink areas.
* Sanitizer test strips must be available on site to test sanitizer levels ( must be at 200 ppm). ( By January 25, 2020)
Call the chemical supplier if the sanitizer is not within acceptable range (150-300 ppm). (
* Ensure that glass door cooler is cleaned and organized. All raw poultry and meats must only be stored on the bottom shelf.
* Ensure that temperature logs are maintained for all coolers.

The operator's FOODSAFE level 1 certification has expired. You must retake the course within 2 weeks.


Just a reminder that all vegetables/produce is only washed using clean buckets. Always clean/sanitize the sinks used for preparing raw chicken/meats.
Dry wall behind the deep freezer in front serving area has been repaired and patched. Good.
