Observation (CORRECTED DURING INSPECTION): *REPEATED VIOLATION*
1. No sanitizer solution was present onsite to sanitize the food contact surfaces such as prep tables. 200ppm bleach solution was prepared at the time of inspection.
2. No sanitizer detected during rinse cycle of low temp mechanical dishwasher.
Corrective Action(s): Ensure that a food grade sanitizer solution is available onsite during facility operation and all the food contact surfaces are adequately washed and sanitized.

Observation (CORRECTED DURING INSPECTION): *REPEATED VIOLATION*
Raw seafood was stored above produce in walk in cooler. This could result in potential contamination of food stored on bottom shelves.
Corrective Action(s): Always store raw meat/seafood on bottom shelves to prevent the risk of food contamination. Staff moved the seafood containers and stored them at bottom shelves away from produce.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): No chlorine residual was recorded at rinse cycle of low temp mechanical dishwasher after multiple runs. Staff primed the dishwasher during inspection. 100ppm chlorine residual detected later at rinse cycle.
Corrective Action(s): Ensure that all the equipment present are maintained in good working order.

Comments

Routine inspection conducted and the following observations were made:

- Temperature of walk in cooler at 4C
- Temperature of stainless steel cooler at 4C
- Stand up cooler at -2C
- White chest freezer at -17C
- Front display cooler at 3C
- Food containers were properly covered and stored at least 6 inches off the floor.
- Low temp mechanical dishwasher used for dishwashing. See violation above.
- 2 compartment dishwashing sink present.
- Handwash sink has adequate supply of hot and cold running water, liquid soap and single use paper towels.
- No signs of pest activity observed.
- Back door was properly closed, no gaps were visible.
- Staff has valid FOODSAFE Level 1 certificate (June 2027).
- Valid Permit to Operate posted.

Recommendations:
- Record temperature of coolers and freezers everyday.
- Regularly monitor the chlorine residual at rinse cycle and maintain dishwasher records.
- Educate staff and assign them to prepare sanitizer solution everyday.
