Observation (CORRECTED DURING INSPECTION): - Package of sliced pepperoni stored in line cooler which was operating above 4C. Temperature or pepperoni was 7.2C.
Staff reported pepperoni was put in line cooler for lunch service which was >2 hours prior.
Corrective Action(s): - Package (1/2 full) or sliced pepperoni discarded by staff at time of inspection.

Observation: - Temperature inside line cooler measured to be 8.8C. No thermometer present inside unit. Temperature monitoring sheet did not have temperature reading recorded for unit since 23-Feb-2023.
Corrective Action(s): - Repair or replace line cooler so that it is in good working order and operating at 4C or colder. Do not store any potentially hazardous foods in this cooler in the interim. To be corrected by: 02-Mar-2023

Comments

- Kitchen and equipment maintained in sanitary condition.
- Handwashing sinks in kitchen and staff washroom were supplied with liquid soap and paper towel.
- Coolers were operating at required temperature (4C or colder) with thermometers present inside with the exception of line cooler noted in violations above.
- Temperatures checked:
- Walk in cooler 2C
- Single door reach in cooler 1C
- Walk-in freezer -14C
Note: small under counter freezer (designated for Legion use) not in use.
- Food was stored in a manner to prevent contamination (wrapped/covered. Raw eggs and raw meat stored beneath ready to eat items).
- Dry storage room well organized with food items stored off of the floor.
- Ice machine appeared clean and maintained.
- New high temperature dishwasher installed since previous inspection. High temperature dishwasher was operational and met required temperature to sanitize dishes. Rinse temperature measured 75.4C at dish surface with min/max thermometer.
- Quats sanitizer (200ppm) present from dispenser and in spray bottles.
- No signs of pest activity noted at time of the inspection. Pest control contract in place with monthly service.
- Foodsafe requirement met at time of the inspection. Both foodhandlers on duty have completed Foodsafe level 1.

Monitoring and Record Keeping:
- Temperatures of walk-in freezer and walk-in cooler checked daily and up to date. Temperatures of single door reach in (dairy) cooler and line cooler not up to date. Ensure temperatures are being checked and recorded according to food safety procedures - to be reviewed by General Manager with foodhandling staff.

Note: Kitchen is shared/used by Legion for food service after 4pm Fri, Sat, Sun. Designated areas present in walk-in cooler, walk-in freezer, dry storage room for use by Legion.
