Observation: Baguettes on shelf are touching bare wood; wood is not clean. Ensure that bread only touches clean, sanitized surfaces.

304 - Premises not free of pests [s. 26(a)]
Observation: Evidence of rats present in the kitchen and storage areas.
Some droppings found below dishwasher and under kitchen hand sink.
Droppings found in cases of cabbage in downstairs storage area, also behind bins in storage area. 2 cases of cabbage discarded.
Pest control report indicated one rat was caught in a trap yesterday.
Corrective Action(s): Clean all rodent droppings. This will allow you to monitor whether any more rats are present. Only a few droppings were found in kitchen so it is possibble that the problem is resolved. Also a case of cabbage that was delivered yesterday had no signs of droppings so that is a good sign that the rats may be gone.
Keep trapping and cleaning. Bait stations have been installed outside to help remove rats from the building.

Observation: A hole was noted in the corner behind the hand sink where the pipes come through the floor. This could allow pests to enter the kitchen. Fill hole; also look for any more holes that require filling.

Observation: Restaurant is fairly clean but the following areas need work:
There is an accumulation of grease and food debris under the grill area. This will also provide food for pests. Clean.
Shelves in many areas require a good scrubbing. Clean.
Some areas under and behind equipment need cleaning.

Fridges are all <4 Celsius.
