- Handsinks in front service area and back prep/dishwashing area supplied with hot and cold running water, liquid soap and paper towel
- Coolers operating at acceptable temperatures (4C or colder):
- 2 door under counter unit 0C
- Display cooler 2C
- 2 door reach in cooler (back) 4C
- Freezers maintaining product in a frozen state
- Chest freezer -30C
- 2 door undercounter freezer -16C
- Quats surface sanitizer present from dispenser at warewashing sinks. Concentration measured 200ppm.
- Pre-mix no rinse quats sanitizer present in spray bottle. Concentration measured 200ppm
- Ice machine appears clean/maintained. Scoop stored in sanitary manner outside of ice bin.
- Reviewed sanitizing frequency for in use equipment such as blender pitcher - minimum every 4 hours.
- High temperature dishwasher operational and met sanitizing temperature. Final rinse measured 71 C at dish surface.
- No signs of pest activity noted at the time of the inspection.
- General sanitation satisfactory. Minimal amount of grime noted on floor under warewashing sink - ensure this area is cleaned.
