Observation: Hot holding unit above sandwich prep station observed with food product build up on ceiling of unit.
Underside of shelving above hot holding unit as well as the underside of shelving above grill observed with grease/food product build up.
Corrective Action(s): This unit is to be cleaned and sanitized daily

Observation: Food debris observed affixed to many tray inserts on the drying rack. All soiled inserts removed from drying rack to be rewashed and sanitized. This is a repeat violation noted in the report on Sept 27, 2021.

Corrective Action(s): Ensure staff are trained on how to properly warewash. Ensure there is accountability in place.
