Observation (CORRECTED DURING INSPECTION): A) Noted salmon skin 22C in closed container with condensation on the lid stored at room temperature. Staff said they were cooling it - discarded at time of inspection.
B) Noted stacked cooked chicken in smal container at 56C internal temperature. Told staff to spread out over large pan to facilitate cooling
Corrective Action(s): Ensure foods are cooled quickly at room temperature from 60C to 20C by spreading out over large tray to facilitate cooling (do not exceed 2 hrs). Then store in cooler unit to cool from 20C to 4C within 4 hrs.

Observation (CORRECTED DURING INSPECTION): Noted container of bean sprouts at 18C stored at room temperature, trays of cooked and cooled tempura on a large tray at 18C and a bowl of batter 26C stored at room temperature. Discarded at time of inspection.
Corrective Action(s): Keep all cold potentially hazardous foods at 4C or less in cooler unit. Option to keep small amount of bean sprouts on ice for immediate use and portion out small amounts of batter and small amount of tempura for immediate use within 2 hrs which is to be discarded if not used - not returned to the cooler unit.

Observation: Lights above dry storage area did not have a cover. Boxes of food noted in hallway outside of customer washroom door which was open. Scoop for ice was stored in the ice at time of inspection. Noted container of flour stored in the area beside the hot water tank.
Corrective Action(s): Install light covers/sleeves. Keep all food in the approve kitchen area. Keep customer washroom door closed at all times. Keep scoop for ice stored outside of the ice in a separate container. Do not store foods beside hot water tank - it is not an approved food preparation area.

- All hand wash stations had soap, paper towel, hot and cold running water.
- All coolers 4C or less (sushi display, undercounter, upright sliding 2 door...etc)
- Freezers (two upright, chest...etc)
- Hot holding of miso soup and rice higher than 60C
- Chlorine sanitizer in front sushi bar area and back kitchen area 100ppm with wiping cloths stored in it
- High temperature dishwasher reached 71C (as per thermolabel)
- General sanitation satisfactory. No obvious signs of pest activity noted.
- Discusses premises limited facilities for cooling. Operator to look into options for proper cooling or keeping cooked foods hot at 60C or higher if proper cooling cannot be accommodated.
