Observation: Again found hot held foods under 60 deg C:

Mixed vegetables have an internal temperature of 45 deg C -cooked vegetables have been there as per operator for about 1 hour

Correction Order issued -next enforceable step is ticketing
Note: As per daily temperature logs this unit was >60 deg C
Corrective Action(s): Re-cook vegetables immediately.

Raise the temperature of hot holder and monitor ensuring hot held foods are >60 deg C

Observation (CORRECTED DURING INSPECTION): Handsink next to 3-door cooler has no paper towels and no dispensed soap
Corrective Action(s): Install paper towel dispenser and soap dispenser overhead of handsink today.

Operator placed a spooled paper towel and portable pumped soap at handsink temporarily

Observation: Mouse droppings observed in dry storage room
Corrective Action(s): Remove droppings

Observation: Following areas observed unsanitary:
-Dry storage room has flour/sugar on the floor next to water heater with droppings present
-2-door freezer walls, bottom and shelves need cleaning
-walls next to 2-compartment sink, handsink area next to dry storage room need cleaning
-floor area of bar area needs cleaning
Corrective Action(s): Clean and disinfect/sanitize these areas more frequently

Observation: Shelving unit is blocking off the mop sink
Corrective Action(s): Either place castors/wheels on this shelving unit to make it moveable or remove it. You must be able to access your mop sink.

-Bar 1-door undercounter 3 deg C (tapioca)
-Bar "Danby" mini-fridge 4 deg C (milk)

Note: 1-door fridge next to washroom has been added last month to supplement other fridges -okay

Hot held foods must maintain foods at or above 60 deg C:
-meat sauce 68 deg C
-Steamed rice 64 deg C

High temperature hot water sanitizer must be >82 deg C as per thermostat:
-Checked and verified at plate level (78 deg C)

Chemical Controls:
Bleach sanitizer buckets must be maintained >100ppm as per test strips:
-checked and verified

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used
-yes

Daily tracking sheets maintained for fridge, hot holder and mechanical washer
-yes

General Sanitation
-All open bags of dry storage maintained in rodent proof containers with lids snapped shut -MAINTAIN THIS- did not observe any pest contaminated foods in dry storage room
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath

Note: lockers for employees have been added next to washrooms -good
