-Seafood processing, display and storage areas appear clean and well maintained
-Handsinks supplied with hot/cold running water, liquid soap and paper towel
-Coolers and cold holding display were at acceptable temperatures (4C or colder):
-Packaged seafood display cooler 2C
-Walk-in cooler 2C
-Ready to eat display cooler 3C
-Raw display cooler 1C
-Fish stored on ice 0C
-Freezers were fucntioning (-15C to -18C) and maintaining product in a frozen state
-Raw fish stored separate from ready to eat items in walk-in cooler and display coolers
-Observed food safe thawing practices at the time of the inspection (ie. in container under cold running water in food prep sink)
-Quats sanitizer (200ppm) present in 3 compartment sink for manual ware washing and available in "Kleen pail" for surfaces
-Reviewed procedures for shellfish tags with Team Trainer in Seafood Department. Tags are kept with lot until put on display and then tag is transferred to binder. Date product received, date offered for sale and date last item sold recorded as well.
