Observation (CORRECTED DURING INSPECTION): Bleach sanitizing solution in pails at service area and back area measured at 0ppm chlorine concentration.
Corrective action: Fresh bleach solution was prepared at time of inspection and measured at 100ppm chlorine. Operator sanitized food contact surfaces in service area and back area with freshly made solution. Adequate sanitizer is necessary to prevent microbiological growth and potential food contamination. Make sure to change sanitizer every 2 hr and check the concentration with test strips. Also change sanitizer if it is visibly soiled.

Observation (CORRECTED DURING INSPECTION): Raw meat patties stored above cooked chicken and salad in stand-up cooler.
Corrective action: Operator repositioned raw meat patties to be below cooked chicken salad. Raw meats must always be stored separate and below ready to eat foods, fruits and vegetables to prevent their potential contamination from dropping from the raw meat, which may cause food borne illness.

General Comments
-Handwashing sink supplied with hot/cold running water, liquid soap and single-use paper towel.
-Chest freezer and walk-in freezer below -18C.
-Walk-in cooler, under counter cooler & stand up cooler below 4C.
-Hot-holdings measured at above 60C.
-3-compartment sink has drain plugs. Sanitizing compartment is set-up and measured at 100ppm chlorine.
-Temperature log is maintained.
-General sanitation is satisfactory.
-Exhaust hoods are clean.
-No sign of pest activity visible at time of inspection.
-FOODSAFE Level 1 is available for staff.
-Washroom sink is supplied with hot/cold running water, liquid soap and single-use paper towel.
-Chlorine test strips available.
