203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): In the walk-in cooler, cooked large festive ham 21C internal temperature. This piece of ham will be presented at the display as a whole piece; not meant to be cut into pieces. It did not exceed the cooling time limit.
Corrective Action(s): Deli operator placed the ham into the freezer to cool it quicker.
***Monitor and ensure cooling temperature of cooked foods is 60C to 20C within 2 hours, then further 20C to 4C within 4 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Food debris and juices were still observed behind blade of the vegetable and deli meat slicers after being cleaned/sanitized.
Corrective Action(s): Staff was directed to continue to clean/sanitize.
***Clean/sanitize hard-to-reach places of the equipment more thoroughly.

Observation: Significant amount of multi-grain seeds spelt in the back corner of the premises where baking trolleys were stored.
Corrective Action(s): Clean up the food from the equipment and floor (2 days).

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. The surfaces of the wooden shelvings at the bakery decoration table were exposed timber/wood such that grease/debris had been absorbed/accumulated.
2. At the bakery decoration table, baking supplies were stored in a wooden container made of exposed wood/timber.
Corrective Action(s): 1. Repair/paint/replace wooden shelving so that surfaces in the premises are smooth, impervious, and can be effectively cleaned (1 month).
2. Do not use/remove this wooden container within the premises (2 days).

Observation: In the walk-in cooler, significant rusting observed on metal shelving units particularly the frame/legs.
