Observation: *Repeat Violation* Three non-food grade (Home-Depot) containers observed containing food product in the walk-in cooler and freezer unit. Non-food grade containers can potentially leach chemicals into food product.
Corrective Action(s): - Operator transferred food from the Home-Depot bucket stored in walk-in cooler unit into proper food grade container.
- However, two Home-Depot buckets in the walk-in freezer to be transferred into a proper food grade container by today.

- Handwashing station supplied with hot and cold running water, liquid soap and paper towel
- 3 compartment sink available and set up for manual ware washing
- Sanitizer solution in 3 compartment sink registered at 100 ppm chlorine
- Sanitizer buckets with wiping clothes registered at 400 ppm QUATs
- Sanitizer spray bottle registered at 400 ppm QUATs

- Walk-in cooler organization satisfactory. Food product is covered and protected from contamination.

- Improvements made to overall sanitation of the facility.
- Floor and walls under and behind cook line in satisfactory condition
- No cardboard usage observed in the facility
- Operator indicated a plan is in place to replace the cutting board at the prep cooler station.
Note: Temporarily using adequate cutting boards in place of the cutting board at the prep cooler station.
