Observation (CORRECTED DURING INSPECTION): Observed two food items in the kitchen hot holding unit (used to hold foods at or above 60C in between cooking process):
- Stir fried sliced beef internal temperature was measured at 43.8C-56.6C.
- Hot holding unit was measured >60C.
- The other food item (deep fried fish) was measured >60C.

Kitchen manager discarded stir fried sliced beef at this time as per their Food Safety Plan

Follow up inspection to the report JGUU-CPGSSX was conducted:
Inspection conducted with general manager, department manager and Food Safety Quality Assurance (FSQA).
Reviewed Standard Operating Procedure (SOP) for stir fried beef with zucchini (23-2311-006). No steps in this SOP indicated beef during cooking process can be hot held (CCP). FSQA confirms such CCP does not exist for this menu. Food Safety Plan (updated on 2021 June 08) reviewed on hot holding, temperature control, reheating and cooking sections.
Internal temperature of foods in the kitchen hot holding unit was measured with two calibrated probe thermometers (DeltaTrak model 11050).
