Observation (CORRECTED DURING INSPECTION): 1.) Sanitizer a the main bar measured 0ppm QUAT sanitizer concentration.
2.) Missing sanitizer at the food prep line at the front of the kitchen.
Corrective Action(s): Provide sanitizer at min 200ppm QUAT concentration at all food prep areas and bar to frequently and adequately sanitize food contact surfaces. Sanitizers must be stored where cook/chef can easily have access to them during food preparation.

Observation (CORRECTED DURING INSPECTION): The hand soap dispenser is missing at the main handwashing station at the bar.
Corrective Action(s): Immediately provide a hand soap with a proper dispenser to allow staff to wash their hands.

Observation: One of the drawers of the undercounter cooler at the bar is broken. No PHFs stored inside the cooler at the time of the inspection.
Corrective Action(s): Repair the broken drawer. Do not store any PHFs inside the cooler as this cannot maintain adequate temperature.

Comments

- General sanitation is satisfactory.
- All other handwashing stations are supplied with hot/cold running water, soap, paper towels.
- Low temperature dishwasher (main kitchen) dispensed 100ppm chlorine sanitizer at 52.5C during rinse cycle.
- Glass washer (bar) dispensed 12.5ppm iodine sanitizer.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity. A third party pest control company inspects monthly. Send a copy of the latest two pest control reports to the health inspector via email. Contact information provided at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Hot holding units > 60C.
- Highly recommend providing physical thermometers inside all coolers and freezers.
- Ensure to accurately maintain temperature log for all coolers/freezers/hot holding units with proper dates/months. This will be verified during the next routine inspection.
