Routine inspection conducted. The following observations were noted:

1. Temperatures
- Walk-in (vault) cooler at 2C
- Condiment cooler at 4C (top) and 2C (bottom)
- Reach-in cooler at defrost mode at ~7C at time of inspection, reduced down to 3C by end of inspection once defrost mode ended
- Undercounter freezer at -15C
- Stand-up freezer at -15C and retail chest freezer at -18C
- Taquito hot-holder 63C
- Cheese hot-holding unit at 63C
- Honey garlic hot-held at 62C
- Pizza, chicken inside hot-holding cabinets at 60C. Hot-held items are displayed for a maximum of 2 hours (pizza for 1 hour), and then discarded afterwards
- Probe thermometer with alcohol swabs present by the hot-holding cabinet
- Temperature logs are maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottle at 200 ppm QUATS
- 3-compartment sink equipped with drain plug
- Sanitizer logs present and up-to-date
- Dispenser at 3-compartment sink releases QUATS at 200 ppm
- Tongs, pizza cutters in good sanitary condition inside container

3. Storage
- Products for retail sale stored at least 6"off the floor
- All food products are wrapped inside original packaging or in food-grade plastic containers
- Chemicals stored separately underneath the 3-compartment sink
- Mop sink area is generally well organized

4. Pests
- No visible signs of recent pest activity observed at time of inspection
- Professional pest control company conducts routine audits. Technician arrived this morning (Nov 4, 2019) - no evidence of pest activity noted on report

5. Retail
- Spot-check of food products: all within best before dates or expiry dates
- All food products neatly organized on shelving

6. Administrative
- Permit posted
- Manager has valid FoodSafe 1 (Expiry: February 21, 2020)
