205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (e.g. gulab jaman, cream, yogurt, salad) in the prep. cooler and inside the sweets cooler was stored above 4 degrees C. Operator stated that these products were in coolers that were opened frequently during the lunch rush and therefore were above 4 degrees C recently.
Corrective Action(s): Operator moved the cold potentially hazardous food products above 4 degrees C for less than two hours into the walk-in-cooler. Do not store food inside the sweets display cooler or prep. cooler until the coolers are maintained at or below 4 degrees C; Effective immediately.

Observation (CORRECTED DURING INSPECTION): 100 ppm chlorine sanitizer was not available in the container in the front service area or the food prep. area in the main kitchen.
Corrective Action(s): Operator setup 100 ppm chlorine sanitizer during the inspection to sanitize prep. surfaces and tables.

304 - Premises not free of pests [s. 26(a)]
Observation: A small amount of rodent droppings were observed on the floor behind the chest freezer in the dry storage room by the backdoor. A small amount of rodent droppings were observed in a closet of the dry storage room where food and equipment is not stored.
Corrective Action(s): Thoroughly clean and sanitize the above-mentioned areas to remove the rodent droppings; Correct today. Monitor for signs of recent pest activity and continue with the integrated pest control program measures.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. A cloth curtain was observed hanging near the entrance door of the walk-in-cooler. Cloth curtains are not made of impermeable to moisture, easy to clean, or durable materials. Operator stated this is a temporary measure and a washable durable and easy to clean curtain is on order which they are expecting will take approximately one month to arrive.
2. Newspaper was observed lining a shelving unit in the main kitchen area.
Corrective Action(s): 1. Make sure the curtain inside the walk-in-cooler is replaced with one that is made of easy to clean, durable, non-toxic, smooth, and impermeable to moisture materials; Correct within 1 month. Remove the cloth curtain inside the walk-in-cooler; Correct today.
2. Remove the newspaper as it is not durable, easy to clean, or impermeable to moisture; Correct today. Clean and sanitize this shelving unit today.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep. cooler was at 12.5 degrees C at the time of inspection. Sweets cooler was at 13.4 degrees C at the time of inspection after the lunch rush. Operator closed the top lid of the prep. cooler during the inspection.
Corrective Action(s): If the coolers do not return to a temperature at or below 4 degrees C, adjust, re-service, repair, or replace the prep. cooler and sweets cooler so that they maintain a temperature at or below 4 degrees C. Do not store any potentially hazardous food inside these coolers until they are maintained at or below 4 degrees C. A technician was called on-site by the Operator to re-service the refrigeration units towards the end of the inspection. A follow up inspection will be conducted tomorrow.

Observation: Single-use cans were being reused to store dry ingredients near the cooking area.
Corrective Action(s): Ensure all dry ingredients are stored inside food storage containers that are intended for reuse and can be effectively cleaned and sanitized. Transfer the contents of the cans into reusable durable food containers; Correct today.

Comments

Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler was at or below 4 degrees C.
Previously prepared curries were filled approximately halfway in the food containers.
Some of the curries were probed in the walk-in-cooler during the inspection and were measured to be at or below 4 degrees C.
Chest freezer temperatures were satisfactory.
3-compartment sink was supplied with hot and cold running water.
Ventilation hood was in a satisfactory condition.
Hand sanitizer was available near the front entrance door.
Diners were seated at one table belonging to a single party at the time of inspection. It was reviewed that customers belonging to different parties should be seated at least two meters apart at this time unless there are effective barriers installed between the tables.

Note: Dishwashing was not occurring at the time of inspection. Dishwasher had been turned on after the lunch rush and it was still heating up at the time of inspection. Operator has agreed to turn on their dishwasher first thing tomorrow morning to allow it enough time to heat up for the follow up inspection tomorrow.
