Observation (CORRECTED DURING INSPECTION): (1) Two knives were wedged between a sandwich line cooler and the countertop. Both knives had been contaminated with what appeared to be grease from the side of the cooler.
(2) Potato chipper had not been cleaned after last use. Large amount of dried-on potato residue present on blades and contact surfaces.
Corrective Action(s): (1) Re-washed during inspection. Ensure all staff store knives and other utensils in clean storage locations - do not wedge them between pieces of equipment.
(2) Cleaned during inspection. Ensure this is cleaned after use.

Observation: Bowls/tins used as scoops were left inside several bulk food bins.
Corrective Action(s): Removed during inspection. Ensure scoops are kept out of bulk bins between use, or are purpose-designed scoops with handles that can be stored out of the food.

211 - Frozen potentially hazardous food stored/displayed above -18 °C. [s. 14(3)]
Observation (CORRECTED DURING INSPECTION): One box of lamb was left out at room temperature for approximately 2 hours. Staff state this was being returned for credit, and had not been stored in cold storage after delivery.
Corrective Action(s): Moved to cooler during inspection. Ensure any potentially hazardous foods are stored under refrigeration or in the freezer, even if they will be returned for credit.

Observation (CORRECTED DURING INSPECTION): One can of flyspray observed on shelving directly above coffee station, with sugar and other coffee equipment.
Corrective Action(s): Removed during inspection. Ensure all chemicals are stored in designated areas, separate from food.

*General sanitation satisfactory. No pest issues observed during inspection.
*All cooler and freezer temperatures satisfactory (including storage freezers in lockup at other side of building). Note: top door of one chest freezer in lockup is damaged - ensure seal and door are repaired within one month (15th October 2016).
*Hot holding in steambath units measured at 60 C or higher.
*High-temperature dishwasher reached a sanitizing rinse temperature of > 71 C at the plate level.
*Glove use practices satisfactory during inspection.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Dry storage area maintained in tidy condition.
*Ventilation hoods maintained in satisfactory condition.
*Ice machine internals maintained in clean condition. Ensure scoop is kept in a clean container.
*Bar glass washer provided 12.5ppm iodine sanitizer in rinse water.
*Soda gun and holster in clean condition.
*Organization of raw and ready-to-eat foods satisfactory. Items split into smaller containers/pans for cooling. Ensure all foods are covered after initial cooling.
*Note: no temperature records are being kept. Ensure these are restarted today.
