Observation: Rodent droppings were found throughout the deli and on storage areas.
Corrective Action(s): Facility must be maintained in a condition which is free of pests. Facility is currently serviced by a professional pest control operator five times per week. Use the following methods to prevent further pest infestation: determine potential entry points and seal them with steel wool, store foods in pest resistant containers, remove organic waste, garbage from the facility on a regular basis, remove standing water, remove or reduce vegetation at entrances, and follow the recommendation of your pest control operator. Clean and sanitize all areas affected by rodent droppings on a daily basis and contact your pest control operator if conditions worse or do not improve. Also inspect areas each morning for other evidence of pest infestation (scratch marks on food, torn food bags, etc).

Observation: Rodent droppings were found throughout the deli area and in the walk-in cooler.
Corrective Action(s): Clean all areas affected with rodent droppings and sanitize affected areas using a 1000ppm bleach solution (20ml bleach per litre of water).

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Deli manager did not have FOODSAFE Level 1 or equivalent training.
Corrective Action(s): While in operation, at least one person in the deli must have FOODSAFE Level 1 or equivalent training. Deli manager will register for a FOODSAFE Level 1 or equivalent training course.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Deli display coolers were at 4C.
-Customer area coolers were at 4C.
-Under counter cooler was at 4C.
-High temperature dishwaher had a final rinse of 71C on the dish surface (minimum of 71C required for proper sanitizing),
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Quats sanitizer dispenser was tested at 200ppm.
-Deli slicer sanitized every 2 hours and broken down every 4 hours.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
