Observation: The quats sanitizer dispenser at the triple sink located near the ovens is dispensing the sanitizer at 400 ppm.Too High!
Corrective Action(s): Recalibrate or adjust the dispening system so that it dispenses quats at 200 ppm ( immediately).

*Ensure that staff are monitoring internal hot holding temperatures at least 1 hour after cooking items such as BBQ Chicken, Wings, Nuggets etc.
The intent for hot holding logs is to monitor if the display units are capable of maintaining hot items at 60 C or hotter.
