Observation: Reorganization required for the back area closed to the back entrance/dishwashing/back prep area/right corner just outside of the walk-in cooler.
Corrective Action(s): Ensure all cardboards/egg cartons are removed from the facility. Remove any items that are no longer in use at the facility. Declutter the back storage area.

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below -18'C.
NOTE: Ensure to keep the prep cooler lid closed to maintain the required temperature.
- Hot-holding units operating above 60'C.
- General food storage practice satisfactory throughout.
- Scoops stored in proper manner.
- Foods obtained from approved sources.
- 200ppm chlorine solution available in a labelled spray bottle.
NOTE: Ensure to have the nozzle replaced as discussed at this time.
- 3 compartment sink equipped for manual dishwashing.
- No evidence of pest activity observed at this time.

NOTE: Ensure all cooked foods are cooled from >60'C to 20'C within 2 hours and from 20'C to 4'C within the next 4 hours. DO NOT leave cooked food at room temperature for more than 2 hours.

Improvement required for general sanitation level. Follow-up inspection to be conducted on Friday, April 29, 2022.
