Observation: No thermometer on site. One accurate probe thermometer must be acquired to check refrigeration, hot holding, and high temperature dish washer temperatures to ensure they are working.

-Quat sanitizer is 200 ppm
-Freezer measured -18C or less
-Coolers measured 4C or less
-Ice machine is in sanitary condition
-Meat slicer is in sanitary condition
-Hot holding measured greater than 60C
-High temperature dishwasher measured 77C
-Food is covered and protected from contamination
-Note: a few snap traps were found not set. Reminder for staff to not kick traps as unset traps are ineffective. Also, ensure pest control company is checking devices as one glueboard beside washing machine is found soiled.
