- hand wash station stocked with liquid soap and paper towel
- All cooler ambient air temperature below 4 degree C
- All freezer ambient air temperature below -18 degree C except 2 door under counter freezer
- All hot holding above 60 degree C
- Dishwasher final rinse temperature above 72 degree C at the dish surface
- 100 ppm Cl solution available for wiping cloths
- Food safe level 1 trained staff on duty permit to operate posted
- no pest activity noted during the inspection
Reminder: All potentially hazardous foods stored at room temperature must be discarded after 2 hours. Time logs must be in place.
