Observation (CORRECTED DURING INSPECTION): The glass door cooler by the stove was at 7.5 degC.
Corrective Action(s): Thermostat was adjusted during the inspection. The cooler must be able to maintain a temperature of 4 degC of below.

303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: The hot water temperature at the sinks were around 33 degC. The hot water temperature at the tap must be at least 45 degC. There was a repairman on-site fixing a leak on the sprayer nozzle of the tap at the 3-compartment sink. He looked at the electric water heater as well and increased the temperature from 124 degF to 150 degF.
Corrective Action(s): You should not be running out of hot water at any point during the operation. If this continues to happen, then it's an indication that your hot water tank is too small for your operational needs. You will need to install a larger tank. Random follow-up inspections will be conducted to check the hot water temperature in the afternoons.

209 - Food not protected from contamination [s. 12(a)]
Observation: During the inspection, staff was cutting raw chicken on the prep counter right next to where the clean plates are kept as well as the cooked rice. This is a repeat violation and not acceptable.
Corrective Action(s): Install more shelving. Move the clean plates from its current location. Relocate the rice cooker. There is to be no clean dishes or ready to eat foods stored on the counter where raw meats are being cut and processed. If this continues, you will be issued a violation ticket.

Observation: General cleaning required.
Corrective Action(s): Get the exhaust hood serviced, it's overdue. Clean under the stoves and the wall behind the dishwasher. Clean the coolers.

-200ppm bleach is available for cleaning.
-Dishwasher rinse temperature was 71 degC at plate level.
-As discussed, all Foodsafe Level 1 certificates issued prior to 2013 expire on July 29th, 2018. Get staff recertified as required.
-Current hot water tank is 285L (75 ga).

A FOLLOW-UP INSPECTION WILL BE CONDUCTED TOMORROW AFTERNOON. IF YOU DO NOT HAVE RUNNING HOT WATER AT A TEMPERATURE OF AT LEAST 45 DEGC AT THE TAP, YOU WILL BE ISSUED A CLOSURE ORDER.
