Monitoring logs being maintained Dishwasher at 78c (At plate level) Liquid soap and paper towels at hand sink All cold holding equipment cold holding at <4c Freezers cold holding at <-18c Quat sanitizer container for wiping rags in place. Ensure wiping rags are stored in the sanitizer when not in use. Change the sanitizer every 2 hours. Sanitizer tested at 300-400ppm Burned out ceiling fluorescent light fixture has been repaired. Ice machine is clean
