Comments

All fridges are maintaining foods at 4 degrees Celsius or colder.
Freezer is -18 degrees Celsius or colder.
Spray bottle of sanitizer contained 200 PPM Quat residual.
Liquid soap and paper towel available at handsink.
Soups and foods in warmer were being maintained at 60 degrees Celsius or hotter.
Ensure that the wiping cloths are being maintained in a 200 PPM quat residual between uses. Measured less than 100 PPM during inspection. This was corrected during inspection.
Note : A new conveyor oven has been installed. Acquire a copy of the manual to ensure proper operation and cleaning of unit is being carried out.
