Rodent trap boxes had dead baby mice (at least 2-3 per box).
Corrective Action(s):
1. Call pest control immediately.
2. Set up regular pest control.
3. Submit copy of pest control report to health department and have available onsite.
4. Ensure dead mice are removed and new traps are set.

Observation:
Both ventilation canopies have accumulation of grease and debris.
Corrective Action(s):
Clean both ventilation canopies and ensure they are serviced regularly. To be corrected by September 20, 2017.

Routine Inspection:
- Kitchen not in operation at the time of inspection.
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Walk-in cooler temperature = 4 degrees Celsius.
- Freezer temperature satisfactory.
- After multiple attempts, final rinse temperature for high temperature dishwasher reached with 71.4 degrees Celsius at dish surface.
ENSURE TO TURN ON DISHWASHER IN THE MORNING AND ALLOW TEMPERATURE TO REACH AT LEAST
*60 DEGREES CELSIUS FOR WASH CYCLE
*82 DEGREES CELSIUS FOR RINSE CYCLE
- Bleach available onsite. Ensure when kitchen is in operation, a 100-200 ppm bleach sanitizer solution is available. Store wiping cloths in bleach solution.
