Observation: Build up of grease and dirt in the following areas:
- underneath the three compartment sink
- around the stove top
- on shelving units in the dry storage area
- on shelving racks inside the coolers
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule, especially for hard to reach areas.

Observation: Operator reusing single use containers to store salsa inside the cooler.
Corrective Action(s): Discard the container. All single use containers must be discarded after initial use. Store all food items in metal bins or food grade plastic containers that can be adequately washed and sanitized.

Observation: Missing working thermometer inside the cooler in the back of the kitchen.
Corrective Action(s): Provide working thermometer inside the noted cooler above. All refrigeration units must be equipped with working thermometers.

Comments

General sanitation needs improvement. See violation section.
- Main handwashing station supplied with hot/cold running water, soap, and paper towels.
- Three compartment sink available for manual warewashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Surface sanitizers available in spray bottles at 100ppm bleach concentration. Change out the sanitizer solutions daily to ensure effectiveness.
- Dry storage area has adequate space and wire racks. Ensure that all boxes and food items are stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection. Please post the certificates in a conspicuous area.

- All coolers: < or = 4C
- All freezers: < or = -18C
- All other coolers and freezers equipped with working thermometers.
- Hot holding unit (warmer, rice cookers): > or = 60C
