Observation:
The door gasket, on the u/c cooler door in the burger assembly area, is not tightly sealing the door shut. Cold area is constantly leaking out. The cooler motor is constantly running to keep the food cold, this could cause the motor to break down faster.
Corrective Action(s):
Repair or replace the door gasket so it can tightly seal the door shut.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Bleach sanitizer in cloth buckets had [Cl2] of 100ppm.
- Quats sanitizer in spray bottles had strength of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate from RTE foods; and all foods stored 6" off the floor on racks, shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopies and filters are free of grease and dust.
- No signs of pests.
- Valid FoodSafe certified staff present, or they hold an equivalent recognized course.

**The 3-comp dishwashing sink spray nozzle and hot water tap are broken. The hot water constantly flows out of the nozzle and/or faucet, even though the hot water tap is fully turned off/closed. A company is scheduled to fix the problem. Ensure the hot water tap and spray nozzle is able to turn the hot water fully on/off, to prevent creating a constantly wet environment which drain/fruit flies will breed in.**
