General sanitation - good. Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water. Cooler temperature = 4 degrees Celsius. Thermometers present in cooler. Freezer temperature = -20.1 degrees Celsius. High temperature dishwasher is not in use at the time of inspection. The operator claimed it has been serviced recently. Ensure prior to use that the dishwasher = >71 degrees Celsius at plate level after final rinse cycle. Ventilation canopy clean. No signs of pest activity at the time of inspection. Overall cleanliness and maintenance very good. Note: Kitchen is not in use at the time of inspection. Recommendation: Surface sanitizer must be available during an operation (Bleach at 100 ppm or Quat at 200 ppm).
